Spinach Salad with Hot Bacon Dressing
Hot bacon dressing over fresh leafy spinach is sooooo good!  You can't buy anything like this 'off the shelf'.
PREP TIME: 10 minutes
COOK TIME: 15 minutes

8 ounces sliced bacon, diced

1/4 cup chopped onion

1/2 cup cider vinegar

1 cup cold water

1/2 cup sugar

1/2 jar diced pimientos, drained

1 tablespoon Dijon mustard

1/2 teaspon salt

1/8 teaspoon pepper

1 tablespoon and -1/2 teaspoons cornstarch

1 tablespoon cold water

2 pounds spinach, washed and stems removed

  1. In a large skillet, cook bacon until crisp.  Remove bacon from skillet and set aside.  Drain bacon drippings from skillet, reserving 2 tablespoons in the skillet.  Return skillet to heat; add onion and saute until tender; turn off heat.  Add to the skillet vinegar, water (1 cup), sugar, pimientos, mustard, salt, pepper and bacon; mix all together.  Combine cornstarch and cold water (1 tablespoon) then stir into skillet; stirring constantly bring mixture  to a boil for 2 minutes.
  2. Place spinach in a large salad bowl; pour desired amount of dressing over salad and toss. 
  3. Leftover dressing can be refrigerated and reheated before serving.
