Confetti Salad

This fresh and crunchy salad will brighten up your table and your taste buds too!

INGREDIENTS

1 pound fresh broccoli, chopped into bite size pieces

1 (16 ounce) can kidney beans, rinsed and drained

2 large tomatoes, coarsely chopped

1 medium red onion, chopped

1 cup shredded cheddar cheese

1 (16 ounce) bottle of your favorite Italian salad dressing

DIRECTIONS

  1. Place the broccoli, kidney beans, tomatoes, onion and cheese into a large bowl and toss.  Drizzle with dressing and toss to coat.  Refrigerate for 4 hours or overnight, stirring occassionally.  Serve with a slotted spoon.
