Mixed Greens with Cocoa Nib Vinaigrette

Chocolate gives an unexpected layer of flavor to this vinaigrette.  Delicious.

INGREDIENTS
  • 1/4 cup finely minced shallots
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh tarragon leaves
  • 1 tablespoon cacao nibs
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 3 tablespoons extra virgin olive oil 
  • 4 cups torn romaine hearts, washed and spun dry or other greens, like baby spinach.
  • 1 cup Arugula leaves
DIRECTIONS

Whisk together the minced shallots, vinegar, tarragon, chocolate nibs, salt, and pepper in a large bowl. Slowly whisk in the olive oil.

Add the greens and toss to coat. Transfer to serving plates and serve immediately.
