Summer Veggie Salad

Fresh, cold, and just a little bit tangy.  Perfect for summer!

INGREDIENTS

1/4 cup red wine vinegar

2-1/2 tablespoons vegetable oil

2 garlic cloves, minced

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 teaspoon sugar

1/2 pint cherry tomatoes, halved

1 small cucumber, peeled and thinly sliced

1 small green pepper, julienned

1/2 red onion, sliced into rings

1 tablespoon chopped fresh basil

 

DIRECTIONS
  1. In a large bowl, combine vinegar, oil, garlic, salt, peper and sugar, mixing thoroughly.  Add the remaining ingredients and toss gently.  Cover and refrigerate for a least 1 hour.
