Table-Side Caesar Salad
Impress your guests with a table side presentation. Fun and easy to do! Pre-measure everything and you are set to go.
PREP TIME: 20 min.
1 Small head of Romaine (washed, dried and torn to bite size pieces)
1 egg coddled (Boiled for 1 minute)
2 cloves garlic
1 lemon (juiced)
2-3 dashes Tobasco
1/2 t Worcestershire
1/4 t Salt
1/8 t pepper
1 anchovy fillet chopped (optional)
3 T Parmesan Cheese (shredded)
Crusty French bread cut into 1" cubes
Olive Oil
1 clove garlic
  1. SALAD: In a wooden salad bowl rub the inside with the 1 garlic clove.
  2. Add the romaine and break the egg over the lettuce and toss.
  3. Squeeze the juice of one lemon over the salad (be sure to remove seeds).
  4. Add the tobasco, worcestershire, salt, pepper, anchovy and toss.
  5. Grate fresh Parmesan on top, and serve garnished with homemade croutons.
  6. CROUTONS: Heat a medium fry pan with olive oil (enough to cover the bottom) over med-high heat.
  7. Add 1 minced garlic clove and the bread cubes.
  8. Turn as needed to brown and crisp (this happens quickly).
  9. Remove and drain on paper towel.
