Green Papaya Salad

A favorite in Thailand, this salad is light and refreshing with a touch of spice.  Great on a hot summer day!

INGREDIENTS
1 T dried shrimp
6 Thai Chilies
4 garlic cloves
1/4 c lime juice
2 T fish sauce
4 T brown sugar or palm sugar
1 lb grated green papaya (not quite ripe)
1 tomato, cut in half, seeded and then cut in thin strips
DIRECTIONS
  1. Crush the dried shrimp, chilies and garlic cloves.
    Whisk in the lime juice, fish sauce and the sugar.
    Pour the mixture over the papaya and tomatoes, toss and serve.
