Islands Meet Southwest Mango Salad

Amazing, addictive taste that just so happens to be healthy too.  You'll be making this again, and again, and again!

COOK TIME:  8 minutes
INGREDIENTS
2 medium sized mangoes, peeled & cubed - 2 cups
1 cup red onion, chopped
1 cup red bell pepper, chopped
1/3 cup fresh lime juice
3 T fresh cilantro, chopped
1 T vegetable oil
2 garlic cloves, minced
6 ears sweet corn
1/2 t salt
1/2 teaspoon ground cumin
1 can (7 oz.) chipotle chile in adobe sauce, chopped (use less to adjust to taste)
2 (15 oz.) cans black beans, rinsed and drained
8 cups gourmet salad greens
DIRECTIONS
  1. In a large bowl, mix together mango, red onion, red pepper, fresh lime juice and cilantro.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add minced garlic and cook for 20-30 seconds.  Add corn; cook for approximately 8 minutes, stirring occasionally. Remove from heat and add to large bowl.  Mix in salt and ground cumin.  Add chopped chipotle chilis and black beans; mix well.
  3. Place 1 cup greens on each of 8 salad plates.  Top with 3/4-1 cup fruit and vegetable mixture.
