Cook bacon slices over medium high heat until crisp. Drain, crumble and set aside.
For dressing; wisk pineapple juice, vinegar, olive oil, pepper and salt together- set aside.
Toss lettuce, pineapple, macadamia nuts, green onions and bacon together in large bowl. Pour 1/4 cup dressing over salad. Add additional dressing to taste and toss to coat. Top with toasted coconut.
