Tropical Salad with Pineapple Vinaigrette

The perfect (perfectly delicious!!) salad for a summer day. It will bring back memories of tropical sunsets!

PREP TIME: 20 minutes
COOK TIME: 12 minutes
  • 8 slices bacon
  • 1/3 cup pineapple juice
  • 4 tablespoons red wine vinegar
  • 1/3 cup olive oil
  • freshly ground black pepper to taste
  • Kosher salt to taste
  • 1 package chopped romaine lettuce  (10 oz)
  • 1 1/4 cup diced fresh pineapple
  • 1/2 cup chopped and toasted macadamia nuts
  • 4 green onions, chopped
  • 1/4 to 1/3 cup flaked coconut, toasted


    Cook bacon slices over medium high heat until crisp. Drain, crumble and set aside.

    For dressing; wisk pineapple juice, vinegar, olive oil, pepper and salt together- set aside.

    Toss lettuce, pineapple, macadamia nuts, green onions and bacon together in large bowl. Pour 1/4 cup dressing over salad.  Add additional dressing to taste and toss to coat. Top with toasted coconut.
