Apple and Fennel Salad

A light, refreshing salad that only takes minutes to make.  Can't find juniper berries, then add blue cheese and chopped walnuts.

INGREDIENTS

1 fennel bulb (12 ounces)

1 Granny Smith apple

Juice of 1/2 lemon

2 tablespoons extra virgin olive oil

Salt and freshly ground pepper

15 juniper berries

DIRECTIONS
  1. Trim the fennel, keeping some of the top fronds for garnish.  Use a mandolineto cut the fennel against the grain as thin as possible.  Core the apple and cut into 1/2" pieces.  Place fennel and apple in bowl and toss with lemon juice, olive oil, salt and pepper.
  2. Crush the juniper berries with the flat side of a knife and then mince.  Stir them into the salad and let sit for 5 minutes.  Before serving mince the fennel fronds and sprinkle over salad mixture.
