Wild Rice Salad with Strawberries

This salad is almost a meal in itself, but also works well as a side salad for lunch or dinner.   The earthiness of the rice mixed with the freshness of fruit makes this a great spring or summer salad.
 PREP TIME:  15 minutes
 COOK TIME:  60 minutes
3 cups water
1 1/2 cups wild rice
1/3 cup chopped scallions (approximately 3)
1 lb. strawberries-quartered and then sliced
1/3 cup olive oil
1/3 cup orange juice
1/3 cup raspberry vinegar
  1. Use a medium or large saucepan to boil water over a high heat.  Add wild rice to the boiling water and bring back to a boil. Lower heat and simmer for 50 minutes or until water is absorbed. Allow rice to cool.
  2. Once the rice is cooled add oil, orange juice, vinegar, scallions and strawberries. Toss and serve promptly.

    Note:  The rice can be prepared the night before and stored in the refrigerator until ready to mix with other ingredients and serve.  In place of strawberries you may substitute raspberries or mandarin oranges.
