Pancetta, Fruit, Spinach Salad

A little salty, a little sweet, and a little tangy...This salad has it all!!!

INGREDIENTS

Dressing:

2 tablespoons olive oil

2 tablespoons orange juice

2 teaspoons raspberry vinegar

1 teaspoon coarse grained prepared mustard

Salt and pepper to taste

Salad:

1 cup  cooked pancetta, cut into 1/2" strips

8 cups baby spinach, rinsed and dried

1 cup cantaloupe, diced

1/2 cup mango, diced

1 small red onion, thinly slided

DIRECTIONS
  1. Dressing:  In a small bowl, whisk together the oil, juice, vinegar, mustard, salt & pepper.
  2. Salad:  In a large bowl, toss together the pancetta, spinach, cantaloupe, mango and onion.  Pour half of the dressing over and toss to coat.  Add more dressing to your desired taste.  Serve immediately
