Julia Child's Cornbread Stuffing Recipe

Forget the turkey and potatoes...Bring on the stuffing!  The sweetness of the cornbread with the savory seaonings and sausage make this a meal in itself.

INGREDIENTS

5 c cornbread, (use your favorite cornbread mix)

1 lb. sausage meat

2 c chopped onions

1 1/2 c celery, chopped

2 c bread crumbs, unseasoned, slightly pressed down

2 eggs, lightly beaten

3 T sage (more if you like)

4 oz. melted butter

salt

pepper

DIRECTIONS
  1. Prepare cornbread according to mix directions.
  2. Break up sausage meat.  Saute in pan for several minutes until gray.  Scrape into a large mixing bowl, leaving fat in pan.
  3. In pan with fat, saute onions for 5-6 minutes.  Add celery, sauter for 2 minutes.
  4. Add the sauteed vegetables to the sausage, along with the conrbread and bread crumbs.  Combine sage and eggs, and pour into mixture.  Fold in the melted buetter.  Season with salt and pepper to taste.
  5. Place mixture in a baking pan, cover with foil, and bake at 350 for 20-30 min., maybe less.  Do not overbake otherwise the stuffing will dry out.
