Round'em Up Cowboy Beans

These are 'over the top' good...Try them the next day on fresh baked bread, delish sandwich!!
PREP TIME: 20 min.
COOK TIME: 2 1/2 hrs.

2 c canned pinto beans, drained

2 c canned red kidney beans, drained

6 slices bacon

1 T bacon fat

1 T vegetable oil

1 onion, chopped

5 garlic cloves, minced

1 smoked ham hock

2 c water

2 c black coffee

1 c barbecue sauce (Sweet Baby Ray's or any tomato based sauce)

1/2 t red pepper flakes

Grated Cheddar cheese (as an added topping- optional)

Red onion diced (as an added topping- optional)

Salt and pepper to taste



  1. Fry bacon until crisp in large heavy bottom pot.  Remove bacon and drain on paper towel, dice.  Reserve one T of bacon fat in pot, add vegetable oil and heat over medium high heat.  Add onion and saute until translucent and slightly brown (stir often).  Add garlic and saute another 2 minutes.
  2. Add bacon, ham hock, water, salt, pepper and coffee to the pot with onions and garlic.  Simmer for 60 minutes.
  3. Add drained beans and barbecue sauce, stirring to combine.  Cover and simmer on low heat until meat on the ham hock starts to separate from the bone, about 2 hours.  Check occasionally and give a stir.  Remove from heat and add red pepper flakes.
  4. Serve with grated cheese and chopped onion.
