Vegetable Tempura

This delicate batter forms a crisp coating on the vegetables- combined with the dipping sauce it is delish!  The recipe rivals tempura we've had at the best restaurants.

INGREDIENTS

Dipping Sauce:

1 c Dashi soup stock
1/4 c mirin
1/4c soy sauce
1/2 T sugar
grated daikon

Tempura:

1/2 cup plain flour
1/2 cup corn flour or rice flour
1 teaspoon baking powder
1/2 teaspoon salt
1 egg yolk
2/3 cup ice cold water
Oil for deep frying

1 each, sweet potatoe and zucchini, 1/4" slices

8 broccoli flowerettes

8 button mushrooms


DIRECTIONS
  1. Dipping Sauce:  Put mirin in a pan and bring to a boil on medium heat.  Add dashi, soy sauce, and sugar in the pan.  Bring the sauce to a boil.  Stop heat.  Add daikon before serving.
  2. Tempura:  Sift together the flours, baking powder and salt.  In a medium bowl, beat the egg slightly and mix with the ice water.  Stir in the dry ingredients just until mixed; mixture will be slightly lumpy. Add 1-2  ice cubes to the batter to keep cold.  Dip the vegetables into the batter, a few at a time, and place in deep fryer; fry until golden brown.  Remove and drain on paper towels.  Serve immediately with the dipping sauce
