Green Beans with Bacon and Carmelized Onions

We had carmelized onions left over from a previous dish and added them to tradtional green beans / bacon and WOW...absolutely delicious!!
PREP TIME:  15 min.
COOK TIME: 50 min.

2 1/2 lbs. green beans, trimmed, cut into 2 inch pieces

1 lg. sweet onion

1 - 2 T olive oil

1 T sugar

1 1/2 t balsamic vinegar

8 bacon slices, cut into 1/2" pieces

3 T butter

  1. Place beans in a large pot of boiling salted water, cook til crisp-tender, about 4 minutes.  Drain and rinse under cold water.  Drain well, pat dry with paper towels.  Can be done 6 hours ahead, wrap in paper towels and place in a sealed plastic bag.
  2. Saute onion in olive oil until translucent.  Add sugar and vinegar, cook until carmelized 30-40 minutes.  Remove from heat and set aside.
  3. Cook bacon in a heavy large skillet over medium heat until crisp.  Transfer to a paper towel to drain.  Reserve 1 T of bacon fat from in the skillet.  Add the butter to the skillet and melt over medium heat.  Add the beans and saute until heated through.  Add the bacon and carmelized onions, toss to combine.  Season with salt and pepper to taste.  Transfer to bowl and serve immediately.
