Corn on the Cob with Shallot Butter

This shallot butter takes corn on the cob to a whole new level!!

INGREDIENTS
1 stick butter at room temperature
1/4 cup finely chopped shallots
2 1/2 tablespoons chopped fresh thyme
8 ears fresh corn, shucked
1 tablespoon granulated sugar
Salt and pepper to taste
DIRECTIONS

Blend butter, shallots and thyme in small bowl. Season to taste with salt and pepper.
Fill large pot 1/2 full with water.  Add sugar and bring to boil.  Turn off heat and add corn.  Let corn sit in pot for 5 - 10 minutes then drain. Serve corn with shallot butter.
