Julia Child's Braised Onions

Simply delicious...The onions become sweet and tender, melting in your mouth!
PREP TIME:  5 min
COOK TIME: 25 min.

1 lb. pearl onions, about 1 inch in diameter

1 1/2 T Butter

Chicken Stock

Salt and pepper


  1. Blanch the onions in boiling water for one minute.  Drain and rinse in cold water to stop cooking.  Slice off the ends; slip off the skins.
  2. Before braising, saute peeled onions in one layer in butter until lightly frowned.  Then add liquid and salt; cover and simmer slowly for 25 minutes, or until tender.
  3. Option: For "creamed" onions add some heavy cream to the braised onions when they are just tender.  Simmer several minutes until thickend, basting.
