Garden Tomato Gratin

Whether fresh from your garden or from your local market, this tomato side dish is great with just about any main course.
PREP TIME:  20 minutes
COOK TIME:  24 minutes

1 clove garlic, cut in half

2 tablespoons olive oil

1 large onion, chopped

1/2 teaspoon grated orange zest

3 tablespoons orange juice

2 teaspoons honey

1 tablespoon fresh thyme, chopped

4 pounds tomatoes (heirloom make this dish more colorful), thickly sliced

1/2 teaspoon salt

1/2 teaspoon pepper

1 cup french fried onion rings

1/4 cup grated Romano cheese

  1. Heat oven to 425°F.  Rub inside of a 2 to 2-1/2 quart baking dish with garlic.  
  2. Heat in a large skillet over medium-low heat 1-1/2 tablespoons olive oil.  Add onion and cook for 15 minutes, or until translucent and tender. Remove from heat; stir in orange zest and juice, honey and 1-1/2 teaspoons thyme.  Scatter onions over bottom of prepared dish.  Arrange tomatoes, overlapping, on top of onion mixture. Salt and pepper tomatoes.  Sprinkle french fried onion rings and cheese over top of tomatoes. Bake for 20-25 minutes, until juices bubble and crumbs are golden.
