Twice Baked Potatoes
A make ahead side dish to satisfy any potato lover!

PREP TIME:  30 min.

COOK TIME: 1 hr. 15 min.

1 large baking potato
olive oil
2 slices bacon
1/4 c sour cream
1/8 c milk
1 T butter
1/8 t salt
1/8 t pepper
1/4 c shredded cheddar cheese, divided in half
2 green onions, sliced, divided in half
  1. Preheat oven to 400 degrees.
  2. Wash potatoes, rub with a light coat of olive oil and pierce in several places with a fork.
  3. Bake the potatoes in preheated oven for 1 hour or until cooked through. (Should be easily pierced with a fork) set aside and cool 10 minutes.
  4. Fry bacon in a small fry pan, drain and crumble (packaged real bacon bits are a time saver).
  5. Slice potatoes in half lengthwise and carefully scoop out the flesh into a medium size bowl; save skins.
  6. Mix the potato, sour cream, milk, butter, salt, pepper, 1/2 of the cheese and 1/2 the green onions with a hand mixer until well blended and smooth.
  7. Spoon the mixture into the potato skins.
  8. Top each with remaining cheese, green onions and bacon (you may want to add more cheese and onions to taste).
  9. Bake for another 15 minutes just before serving.
