Beer Batter Onion Rings

Calling all onion ring lovers.... These are light and crispy, actually perfect!
PREP TIME:   45 minutes
COOK TIME:  15 minutes
  • 2 cups all-purpose flour, divided
  • 1 bottle beer
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 2 large onions, sliced into rings
  • 2 quarts oil for frying
  1. Sift flour into a large bowl.  Remove and set aside 1/2 cup of flour (for dipping the onion rings before frying).  Mix in beer, butter and salt to the remaining flour mixture.  Allow the mixture to stand 30 to 60 minutes.
  2. Heat deep fryer to 375° F (190° C).
  3. Coat each onion ring with flour then dip into batter.  Deep fry the battered rings, several at a time, until golden brown. Drain on paper towels, salt to taste and serve.
