Mac and Cheese Cups

This mac and cheese is the ultimate comfort food.  Well worth the extra time it take to prepare. Your guest's will love the individual servings!

PREP TIME: 40 minutes
INGREDIENTS

WHITE SAUCE
2 TBSP butter
2 TBSP flour
½ cup milk
1 cup chicken broth
1 pinch dry mustard
Splash Worcestershire sauce
Splash Tabasco
Salt and Pepper to taste
TOPPING
½ cup fresh bread crumbs
½ cup grated Parmesan
½ tsp seasoning salt
MAC AND CHEESE
½ lb elbow macaroni
½ lb grated cheddar cheese
¼ lb grated Gruyere
½ cup diced tomatoes
1 ½ cups shredded Velveeta

12 to 15 foil muffin cup liners

DIRECTIONS

Preheat oven to 400 degrees. 

WHITE SAUCE: Melt butter in 4 quart saucepan.  Stir in flour and cook for 2 minutes - stirring constantly.  Add milk and broth – cook until thickened. Add mustard, Worcestershire, Tabasco, salt and pepper. Set aside

TOPPING: Combine bread crumbs, Parmesan and seasoning salt.  Set aside.

PASTA: Cook pasta in salted boiling water until al dente.  Add to mac and cheese while still hot.

MAC AND CHEESE:  Combine white sauce, cheeses and tomatoes.  Add hot pasta and stir to combine. Spoon into foil muffin cups sprayed with cooking oil spray.  Sprinkle with topping and bake at 400 degrees until hot, bubbly and golden on top.
