Julia Child's Cranberry Relish

As Julia admonished: "It is a relish and should be somewhat tart to go with meat."  This zesty accompaniment is a perfect compliment to your turkey!
PREP TIME:  10 min.
COOK TIME: 10-20 min.

2 (12 oz.) bags of cranberries, washed and picked over to remove mushy berries and any stems, ec.

2 oranges (zest & squeeze for the juice)

1/2 lemon

1 t fresh grated ginger

1 1/2 c sugar

  1. Take the zest of the two oranges and one-half lemon, and pulverize them in a blender or food processor with 1/2 c sugar.
  2. Put the cranberries and zest-sugar mixture into a large pot.  Stir in 3/4 - 1 c of orange juice (from the oranges), the jui8ce from the half- lemon, one c. of sugar and fresh ginger.
  3. Bring to a bubbling boil, just until the berries burst and then set aside to cool.  Once cooled, I tip my relish into a storage container, snap the lid on, toss in the fridge, and feel slightly smug knowing that I have my holiday cranberry needs well and truly taken care of for yet another year.
