Roasted Garlic Aioli

INGREDIENTS

1 large head of garlic

1 T olive oil

2 egg yolks

1 minced garlic clove

1 small lemon, juiced

1/4 c water

1/4 t salt

Pinch of ground cayenne papper

1 1/2 c extra virgin olive oil

DIRECTION
  1. Cut a thin slice off the top of the garlic head, exposing the cloves. Set the head in a shallow dish (a muffin tin works well), and drizzle with 1 T olive oil, season with salt and pepper. Cover with foil and bake in a 300 degree oven for 1 1/2 hrs. until garlic is very soft inside. Remove from oven and set aside to cool, reserving the excess oil from the bottom of the pan.
  2. When the garlic is cooled squeeze the pulp out of the garlic into a blender and add egg yolks, minced garlic, lemon juice, water, salt and cayenne. Puree until smooth. With the blender on add the reserved oil from the roasted garlic and additional 1 1/2 c of olive oil in a slow steady stream through the opening in the lid of the blender. Continue to process until the mixture is emulsified. Store in a sealed container in the refrigerator.
