Green Eggs and Ham Sandwich

COOK TIME: 4 min.

4 English muffins
4 Eggs
1/4 c. pesto
4 slices of ham
4 slices mozarella cheese
2 tsp butter
  1. Mix the eggs and pesto in a small bowl. Place two large nonstick fry pans on the stove over medium heat. Place the ham slices in one to heat, reduce temperature to low until ready to assemble. Melt butter in the other pan and pour in the egg mixture and swirl, turning gently until set (like an omelette).
  2. Place the english muffins in the toaster. When lightly toasted, place a cheese slice on one half and melt under the broiler, this won't take long so watch closely.
  3. To assemble: Take the half of the english muffin without cheese and place one slice of ham, 1/4 of the egg mixture and top with the other half of the english muffin with cheese. Cut in half and serve.
