Poached Salmon with Dilled Mayo Sandwich

INGREDIENTS
DILLED MAYO
1/4 c mayonnaise
1 t lemon juice
1/2 t capers
1/2 t dill
Pinch of pepper
POACHED SALMON
1/2 c dry white wine
1/2 c water
2 lbs. salmon fillets cut into 4 pieces
2 T butter, softened
1 1/2t dried parsley
1 1/2 t chopped garlic
Salt and pepper to taste
SANDWICH ASSEMBLY
Tomato, thinly sliced
Arugula
Sweet onion, thinly sliced
4 whole wheat or rustic sandwich roll
DIRECTIONS
  1. DILLED MAYO- Combine all ingredients in a small bowl. Cover and refrigerate until ready to use
  2. POACHED SALMON- Heat wine and water over medium high heat in a large non-stick skillet for 5 minutes. Slide salmon pieces into poaching liquid and dot with butter. Sprinkle with dried parsley, garlic, salt and pepper. Bring to a slow boil, reduce heat to medium and poach until salmon flesh is firm, 10-15 minutes.
  3. SANDWICH ASSEMBLY
  4. Place the salmon fillet on the bottom half of the bun, top with tomato, onion and arugula. Spread the Dilled Mayo on the other half of the bun and place on top of the salmon. Enjoy!
