Coconut Chicken Sliders

The crunch of the chicken coating, creamy taste of the coleslaw and topped with the tang of Trader Joe's Sweet Chili Sauce is a winner!!
PREP TIME:  15 min.
COOK TIME: 6-8 Min.

2 lbs. chicken tenders

1 1/2 c panko bread crumbs

1 c shredded coconut

1/2 c sweetened condensed milk

1/2 c orange juice

1 egg, beaten

Salt and pepper


8 slider buns or dinner rolls

Peanut oil for frying

  1. Place chicken tenders on wax paper, salt and pepper both sides and set aside.  Whisk condensed milk, orange juice and egg in a medium bowl.  In a second bowl combine panko bread crumbs and coconut.
  2. Heat oil in a large fry pan over medium-high heat.
  3. Dip chicken tenders in egg mixture and then bread crumb mixture until completely coated.  Set on wire rack.  When all chicken tenders are coated begin frying in batches.  Fry each tender 3-4 minutes a side until golden. 
  4. Spread mayonnaise on slider buns.
  5. Place each tender on the bottom half of a slider bun or dinner roll.  Top with Flossie's Coleslaw, TJ's Sweet Chili sauce and top with the other half of the bun.  Serve immediately.
