Curried Chicken Salad and Mango Chutney Tea Sandwiches

Mango Chutney gives the chicken salad depth and sweetness.  Perfect with a cup of tea.
PREP TIME: 15 minutes

4 oz. cooked chicken breast finely chopped

2 ribs celery finely chopped

1 tsp. curry powder

Salt and pepper to taste

2 TBSP. mango chutney

1/4 cup good quality mayonnaise

6 TBSP softened unsalted butter

12 slices firm and finely textured bread- crusts removed


Combine chicken, celery, curry, salt, pepper, chutney and mayo and and refrigerate for at least 2 hours.  Spread 1/2 TBSP of butter on each slice of bread.  On one slice; top the buttered side with 1/6th of the chicken salad mixture- top with another slice of bread- buttered side facing chicken salad.  Cut on the diagonal or cut into shape with cookie cutter.  Repeat with remaining bread slices.
