Another Recipe Kitchen Tested by the Party Saviors

This traditional soft cheese dip from Bavaria is a perfect start to an evening of beer tasting.  Creamy and delightfully seasoned makes it great with baguettes and veggies.
PREP TIME:  15 min

1 lb ripe brie cheese (White filmy covering removed)

6 oz. cream cheese

1/4 c butter, cut into small cubes

1/4 c dark german ale

3 cloves garlic roasted**

1 t caraway seeds

1 pinch sweet paprika

salt & black pepper

1/4 c diced sweet onions

1 baguette sliced into 1/4" thick pieces

Cut veggies for dipping (cauliflower, broccoli, radishes, and carrots)

1/2 lb mixed olives

  1. Place brie, cream cheese, butter, ale, roasted garlic, caraway seeds, paprika, salt and pepper to taste in a medium size bowl.  Beat well to combine.
  2. In a strainer, rinse the diced onions under cold water.  Drain and transfer to a clean kitchen towel, squeeze out all liquid.  Fold onion into the cheese mixture.  Cover and refrigerate for at least 2 hours for flavors to develp.  Can be stored up to 4 days.
  3. To serve; place cheese spread in a bowl on a serving platter and surround with veggies, olives and baguette.
  4. **To roast the garlic, cut 1/2" off the top of the garlic head (exposing the tips of the galic cloves).  Place in a small baking dish, drizzle lightly with olive oil, season with salt.  Pour 1/4c water in the bottom of the dish, cover tightly with foil, and roast in a 375 degree oven, 1 hour.  (Until a sharp knife easily pierces the garlic)
