Bloody Mary Prawn Cocktail

An obvious pairing.... Prawns and a Bloody Mary! Perfect as an appetizer for brunch (or for that matter, ANY occasion).
PREP TIME: 20 minutes

1 pound medium prawns in shell, peeled and deveined
1 1/2 c thinly sliced celery 1 cup
7 thinly sliced scallions (about 6)

For sauce
1/2 cup ketchup
1/4 cup vodka
1/4 cup fresh lemon juice
2 tablespoons bottled horseradish or to taste
1 teaspoon Worcestershire sauce
1/2 to 1 teaspoon Tabasco or to taste



Prepare shrimp:Bring a large pan of salted water to a boil. Add shrimp, then remove from heat and let stand in water until cooked through, about 5 minutes. Drain and cool to room temperature. Cut shrimp into thirds and transfer to a large bowl with celery and scallions.

Make sauce:Whisk together all sauce ingredients, salt and pepper to taste.

Just before serving, stir sauce into shrimp mixture. Spoon into martini glasses and serve.
