Spice it down for the kids, spice it up for the adults....The perfect 'go to' party dish!
PREP TIME: 20 min.
COOK TIME: 15 min.
1 lb boneless skinless chicken breasts
3 T Italian dressing
1/2 c. BBQ sauce
8 corn tortillas (or small flour tortillas)
1 c cheddar cheese, shredded
1 c canned corn
1/2c chopped olives
Brush chicken breasts with Italian Dressing. Grill 6 - 8 min. on each side until done (165 degrees). Cut into strips.
Spray tortillas with nonstick spray. Place on grill and heat to golden, turn tortilla. Spread BBQ sauce on browned side of tortilla and sprinkle with cheese while the other side is grilling. Remove from grill.
Top cooked tortilla with chicken strips, corn and olives down the center of the tortilla. Fold in opposite sides of the tortilla, roll up burrito-style. Serve warm.
