"Crown" of Drumsticks with Sausage Pecan Stuffing

INGREDIENTS
  • 16 chicken drumsticks (equal size)
  • 2  TBSP flour
  • 1  TBSP paprika
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 8 cups packaged unseasoned stuffing mix
  • 1 1/3 cups pecan halves
  • 8 oz breakfast sausage
  • 1medium onion- diced
  • 1/2 tsp ground nutmeg
  • 1 tsp dried sage
  • 2 tsp dried thyme
  • 2 1/2 cups chicken broth (or more to taste)
  • Kosher salt and black pepper to taste
  • Mango chutney or cranberry sauce

DIRECTIONS

Rinse drumsticks and pat dry.

Using kitchen string threaded through a large needle, pierce drumsticks with needle approx 1/2 inch from the bottom of the drumstick, staying as close to the bone as possible.  Repeat with remaining drumsticks, attaching them all with the string, slide drumsticks until touching, leaving a large length of string at either end.

Combine flour, paprika, salt, and pepper. Rub evenly over drumsticks.

Cover an empty 24 oz can with foil and spray the outside and bottom with cooking oil spray.  Wrap the drumsticks around the can (forming the "crown"), secure by tying the ends of the string, making sure that drumsticks are snug and secure against the can.  Take another length of string and wrap the tops of the drumsticks.  Tie to secure against the can. Place the drumsticks in a 9 X 13 baking pan.  

Set baking pan in 375 degree oven. Bake until drumsticks are well browned, 55 to 60 minutes. Carefully remove the string from the top of the drumsticks. Carefully remove can from center of the crown.  Carefully transfer to a platter at least 12 inches wide (you may need a second pair of hands to assist with this).  Make certain that the "crown" is intact on the plate.

While drumsticks are baking prepare the stuffing;

In medium fry pan crumble and cook sausage until browned. Remove to paper towels. Remove all but 2 tablespoons of sausage fat from pan. Add diced onion; cook until softened, approx. 5 to 8 minutes. Add nutmeg, thyme and sage and stir.  Cook for 1 minute. Remove from heat.

Place stuffing mix in a large bowl. Add onion mixture and combine; add 2 1/2 cups broth and mix well (adding more broth if you desire moister stuffing). Mix in 1/2 cup pecans and salt/pepper to taste.

Place stuffing mixture in a 9" X 13" pan. Bake at 375 degrees until heated through,  approx 10 minutes. 

Spoon hot stuffing into the center of the drumstick "crown"- garnish plate with remaining pecans.

To serve, snip string and remove drumsticks; arrange on plates with dressing and pecans. Seve with mango chutney or cranberry sauce.
