All Day Beef Stew

Start it in the morning.... Go to work, go play or go shopping and when you come home you'll be drawn in by the warm aroma from this hearty stew.
PREP TIME:  20 min.
COOK TIME: 6-12 hrs.
1 pkg baby carrots, each cut in half
7 white or red new potatoes, cut into 8ths
1 cup sliced fresh mushrooms
1 small onion, peeled and chopped
3 stalks celery, chopped
1 pkg pearl onions, peeled (leave whole)
3 pounds stew meat, cubed
1 packet dry onion soup mix
1 can (10.75 oz) condensed golden mushroom soup
2 cubes bouillon
1 cup water
3/4 cup red wine
Sour Cream Horseradish Sauce:
1 cup sour cream
1 Tablespoon prepared hot horseradish
1 teaspoon olive oil
Salt & pepper to taste
Parsley, finely chopped
  1. Combine the onion soup mix, mushroom soup, bouillon, water and wine in a medium bowl.  Pour the mixture over the meat and vegetables.
  2. Cook on low setting for at least 12 hours, or high setting for 6 hours. 
  3. Sour Cream Horseradish Sauce:  Combine sour cream and horseradish in a small bowl. Drizzle a small amount (tsp or less) of olive oil into the bowl and mix well. Season with salt and pepper to taste.
  4. Add a dollop of the sauce on top of each serving of stew and garnish with parsley.
