INGREDIENTS
CRUMB MIXTURE:
1/2 c unsalted butter
1/4 c sugar
1/4 c unsweetened cocoa
1 t vanilla
1 egg
1/4 t salt
1 1/2 c graham cracker crumbs
2 oz flake coconut
1/2 c pecans, chopped
FILLING:
1/2 c unsalted butter
3 oz cream cheese
2 T instant vanilla pudding
1 c sugar
2 T milk
GLAZE:
4 squares semisweet chocolate
1 T unsalted butter
DIRECTIONS
  1. CRUMB MIXTURE: In a heavy saucepan combine butter, sugar, cocoa, vanilla, egg and salt over low heat. Stir until mixture coats the spoon. Remove from heat and stir in graham cracker crumbs, coconut and pecans. Press mixture into a 9" square pan.
  2. FILLING: Cream butter, cream cheese and vanilla pudding until well combined. Beat in sugar and milk; spread over crumb mixture and refrigerate 30 minutes or until pudding is firm.
  3. GLAZE: Melt the semisweet chocolate and butter in a double boiler (water should be at a low simmer); stir to fully blend and spread chocolate over pudding mixture. Refrigerate for 30 minutes, remove and score with a knife to serving size. Return to the refrigerator until set. (Can be frozen for up to 3 months)
