Great Gatsby Parfait

Oh yes it is decadent...dark chocolate, Kahlua and mocha cream. What an ending!
PREP TIME:  40 min.
2 c heavy cream
8 oz. top quality dark chocolate chopped (1/2 oz reserved and shaved)
2 T instant coffee
1 c heavy cream
2 T Kahlua
2 T granulated sugar
2 c Oreo cookies (crushed)
    1. Mocha cream: Heat the 2c heavy cream to a boil in a heavy sauce pan over med-low heat.
    2. Put chopped chocolate and coffee in a medium mixing bowl. Pour hot cream over chocolate and let mixutre stand for a minute until chocolate is melted. Cover and refrigerate until cooled about 2 hours.
    3. Beat mocha cream until just thickened, do not overbeat as it will become stiff. (should be pudding like)
    4. Assembly: Beat the 1c cream, Kahlua and sugar with an electric mixer until soft peaks form.
    5. In a votive glass layer 1/4c mocha cream, 1T cookie crumbs, 2 T Kahlua cream, 1T cookie crumbs and top with a dollop of kahlua cream and shaved chocolate.
    6. Repeat for each parfait.
