Lemon Bars

If you are a lemon connosieur, we think you will find these "melt in your mouth" delcious and they are quite easy to make!
SERVINGS: 24-32 bars
PREP TIME:  15 min.
COOK TIME: 40 min.

2 sticks butter

2 c flour

1/2 c confectioners' sugar

4 eggs, beaten

2 c sugar

4 T flour

1/4 c lemon juice

1 T finely grated lemon peel

Sifted confectionsers' sugar

  1. Preheat oven to 325 F.
  2. Mix together butter, flour, and 1/2 c sugar until well blended.  Pat mixture into an ungreased 13x9x2 inch pan and bake for 18-20 minutes. 
  3. Mix together eggs, sugar, flour lemon juice and lemon peel until well blended and pour over the cooked mixture.  Return pan to oven and bake for another 20 minutes
  4. Use a knife to loosen around the edges of the pan and cut into bars.  Sift confectioners' sugar over the top of the lemon bars while still warm.  Let cool, remove from pan and serve.
