Italian Pinoli Pie

The Italian version of pecan pie. Initially we thought using pine nuts in a dessert would be a bit odd but, this pie is delicious!
PREP TIME: 60 minutes
1/2 cup white sugar
3/4 cup packed brown sugar
2 eggs, beaten
1 3/4 teaspoons pure vanilla extract
1 tablespoon all-purpose flour
1 tablespoon heavy whipping cream
8 tablespoons butter, melted
1/4 tsp fresh lemon juice
3/4 cup pine nuts
1 (9 inch)unbaked pie shell
Whipped cream for garnish
Combine sugars, eggs, vanilla, flour, cream, lemon juice and melted butter in a bowl. Stir until well blended. Fold in the pine nuts.
Pour filling into pie crust.
Bake at 350 degrees F for 40 to 50 minutes. Keep your eye on the crust.  If it starts browning too quickly- cover with foil.
