Snickerdoodles

PREP TIME: 20 min.

COOK TIME: 10 min.

INGREDIENTS
1/2 c butter softened
1 c sugar
1/4 t cream of tartar
1/4 t baking soda
1 egg
1/2 t vanilla
1 1/2 c all-purpose flour
2 T sugar
1 t cinnamon
DIRECTIONS
  1. In a large bowl beat butter with an electric mixer for 1 minute.  Add sugar, baking soda and cream of tartar, beat until combined.
  2. Add egg, vanilla and beat until completely incorporated.  Beat in flour, a little at a time. (You may need to beat by hand towards the end).  Batter should be stiff. Cover and chill for about one hour. 
  3. Shape dough into small 1” balls.  Roll each ball in a combined mixture of 2 Tablespoons sugar and 2 teaspoons cinnamon.
    Place 2 inches apart on an ungreased baking sheet. 
  4. Bake at 350 for 8 to 10 minutes. Do not brown. (They puff up at first, then flatten out.)
