Black & White Cupcakes

PREP TIME: 60 min.
COOK TIME: 30 min.
1 (8oz) pkg. cream cheese, softened
1 egg
1/3c sugar
1/8t salt
1 (6oz) pkg. chocolate chips
1 pkg. Duncan Hines Classic White

2 (8 oz) pkgs of cream cheese softened
1/2c butter, softened
2 c confectioners sugar (sifted)
1 T milk
1 t vanilla
  1. CAKE:
    Preheat oven to 350 degrees.  
    Line muffin tins with paper cups.  
    Blend in a medium bowl the cream cheese, egg, sugar and salt. Fold in chocolate chips and set aside.  
    Prepare cake mix as directed on the box.
    Cover the bottom of each muffin cup with cake mix, then a rounded teaspoon of the cream cheese mixture and then top off with cake mix until cup is 2/3 full.  
    Bake in a preheated oven for 25-30 minutes, until the cake springs back to touch.  
    Remove from the oven and cool on wire racks.
    Top with cream cheese frosting cocoa, coconut or chocolate sprinkles.  
    Cut decorative black and white paper strips and encircle the bottom of the cupcakes.  Place on a tiered cake plate and serve.

    Combine the cream cheese and butter in a medium size bowl until fully blended and smooth.  
    Gradually add sugar and mix until completely incorporated.
    Beat in milk and vanilla until smooth.
    Using a spatula frost the tops of the cupcakes.  Store remaining frosting in the refrigerator.
