Haupia Cake (Coconut Cake)

This cake has a more subtle coconut flavor than other coconut cakes we've tasted. Be sure to let it stand for several hours before serving.

COOK TIME: 20 minutes
INGREDIENTS
1 9 X 13 yellow sheet cake (either your favorite recipe, a bakery cake or a prepared cake mix)
2 cups coconut milk 
1/2 cup sugar
1/4 tsp. salt
3 tablespoons cornstarch
1/2 cup water
1 tsp. vanilla or coconut flavoring

DIRECTIONS

In a saucepan, heat coconut milk. Add sugar, salt, cornstarch and water.  Cook over medium heat and stir constantly until mixture thickens. Stir in flavoring. Take off heat and cool until warm. Poke holes in cake with a bamboo skewer.  Pour about 1/2 cup of coconut milk mixture onto the cake and spread to cover.  Let cool.  'Frost' the cake with remaining mixture. Let stand several hours before serving.
