Chocolate Tiramisu Mini Cupcakes

This quick fix 'dessert bite' will satisfy your sweet tooth!!
PREP TIME: 20 min.
COOK TIME: 10 min.

1 pkg. (18 1/4 oz.) chocolate cake mix

1 1/4 c water

3 eggs

1/3 c vegetable oil

2 T instant espresso

2 T Brandy


8 oz. cream cheese

1 1/2-1 3/4 c powdered sugar

2 T coffee liqueur

1 T cocoa powder


  1. Preheat oven to 350 degrees.  Line 40 mini muffin cups with paper baking liners or spray with cooking oil spray.
  2. Combine all cupcake ingredients in a large mixing bowl; beat with mixer on low for 30 seconds then an additional 2 minutes at medium speed. 
  3. Spoon batter into prepared muffin cups, filling 2/3 full.  Bake 10 minutes or until toothpick inserted into the center comes out clean.  Cool in pans on wire racks 10 min.   Remove cupcakes to wire racks, cool completely.  (At this point cupcakes may be frozen up to 3 months)
  4. Frosting; combine cream cheese, 1 1/2 c sugar in a large mixing bowl.  Beat on medium speed until well blended.  Add liqueur, beat until blended.  If frosting is too soft add additional 1/4 c sugar or chill until spreadable.
  5. Frost cooled cupcakes or dip in frosting.  Place cocoa in a small strainer and sprinkle over cupcakes.  Store at room temperature up to 24 hours or refrigerator up to 3 days.
