Chocolate Chip Cookie Dough Cupcake

Is it a cookie?  A cupcake?  It is two delicious tastes in one!!
PREP TIME:  20 min.
COOK TIME: 20 min.

1 1/2 c Flour

1/4 t baking soda

1/4 t kosher salt

1/2 c butter, room temp.

1/4 c sugar

1/2 c brown sugar

2 t vanilla extract

1 c minature semisweet chocolate chips

1 box yellow cake mix (18.25 oz.)

1 1/3 c water

1/3 c canola oil

3 eggs

1 can prepared Buttercream Frosting

2 T Kahlua

  1. Prepare the cookie dough.  Whisk the first 3 ingredients (flour, baking soda & salt) together in a medium size bowl.  Beat the butter and sugars in a large mixing bowl until smooth.  Add 1 egg and the vanilla extract and beat until smooth. Mix in the flour mixture until just incorporated. Fold in the chocolate chips, mixing just enough to evenly distribute.  Form the dough into tablespoon size balls (24).  Place on a baking sheet and freeze until solid, about 2 hours.
  2. Preheat oven to 350.  Line 24 muffin cups with paper liners.
  3. Lightly beat 3 eggs in a large bowl with an electric mixer. Add the cake mix, water and canola oil.  Continue beating for 2 minutes on medium speed.  Spoon into cupcake liners, 2/3 full.  Place a frozen cookie dough ball on the top center of each cupcake.
  4. Bake for approx. 20 minutes, until a toothpick inserted in to the cake portion comes out clean.  Cool in pans 10 min.  before removing.  Cool completely on wire rack.  Frost half of the cupcakes with buttercream frosting.  For an 'adult flavor' add 2 T kahlua to the remaining half can of buttercream frosting and frost the rest of the cupcakes.
