Steak, Ale and Stilton Mini Pub Pies

These delicious meat pies with a mashed potato topping are the ultimate comfort food!  These were a huge hit with our foody crowd!!
PREP TIME: 2 1/2 hours
1 1/2 lbs round steak
1 pint English ale
4 cups water (approximately)
2 beef bouillon cubes
2 tablespoons all purpose flour
2 large onions, chopped
2 tablespoons vegetable oil
2 teaspoons English mustard
salt and pepper
12 ounces refrigerated pie crust
8 tablespoons ready-made mashed potatoes
6-8 ounces Stilton cheese, crumbled
1/2 stick butter, for the pie topping
Cut round steak into small cubes.
Heat 2 tablespoons oil in a large and deep saucepan. Add the onions and sauté gently for about five minutes until soft.
Add meat cubes and cook to seal.
Add flour and stir into meat mixture.
Add the beer gradually to prevent sticking to the pan until all the beer has been added.
Add beef bouillon cubes, salt and pepper to taste and stir until dissolved.
Add water to thin down sauce.
Add the English mustard and mix well.
Once the mixture comes to a boil- reduce the heat, cover and simmer very gently for at least two hours, stirring frequently and adding water as need to keep the mixture "sauce like" until meat is tender.
Allow to cool slightly.
Pre-heat oven to 425°F.
Roll out the refrigerated pie crust and line 4 individual pie pie plates- the diameter of the pie plates should be approx 5".
Prick each pie crust with fork 8 to 10 times and bake for about 5 - 10 minutes-until slightly golden.
Remove from oven and fill with the steak in ale mixture
Mix the Stilton cheese into the mashed potatoes and pile on top of the steak and ale pies.
Place a pat of butter on top of each mashed potato topping and bake in the oven for about 10 - 15 minutes, or until the pastry is crisp and the potato and Stilton cheese topping is golden brown & bubbling.
