Another Recipe Kitchen Tested by the Party Saviors

If you were in Hogsmeade you could belly up to the bar at The Three Broomsticks or The Hog's Head and have this deliciously butterscotch concoction!
PREP TIME: 10 min
COOK TIME: 5 - 10 min.

1 c  brown sugar

2 T water

6 T butter

1/2 t salt

1/2 t cider vinegar

3/4 c heavy cream, divided

1/2 t rum extract

4  12 oz bottle cream soda

  1. Place brown sugar and water in a small saucepan over medium heat.  Bring to a gentle boil, stirring frequently, until the mixture reaches 240 F on a candy thermometer.
  2. Stir in butter, salt, vinegar and 1/4 c heavy cream.  Set aside and cool to room temp.  Then stir in rum extract.
  3. In a medium bowl, combine 2 T of the brown sugar mixture and the 1/2 c remaining heavy cream.  With an electric mixer beat until just thickened (not whipped), 2-3 minutes.
  4. To serve, divide the brown sugar mixture between 4 tall soda glasses.  Add 1/4 c of cream soda to each glass, then stir to combine.  Fill each glass to the top with additional cream soda.  Serve immediately with a straw.  Optional: top with whipped cream.
