Roasted Stuffed Mushrooms

The saltiness of the bacon, crunch of the water chestnuts make a perfect bite!
PREP TIME:  20 min.
COOK TIME: 25 min.

1/4 lb bacon fried crisp, drained and crumbled

2 T bacon drippings

1/2 onion, chopped

1 celery rib, chopped

1/2 c seasoned croutons, crumbles

1/2 c chicken broth

1/4 c chopped water chestnuts

1/8 t cayene pepper

12 large fresh mushrooms, stems removed and chopped

  1. Preheat oven to 400 degrees.  In a large heavy skillet saute the onion, mushroom stems and celery in bacon drippings until soft.  Remove with a slotted spoon.  Combine all the ingredients and mix well.  Season with salt and pepper and stuff mushroom caps.  Bake 25 min. or until bubbly.
