Coxinhaus (Mock Chicken Legs)

INGREDIENTS

1roasted chicken- from your grocery deli     
3 tablespoons olive oil
3 cloves garlic- minced
1 medium onion, chopped
Salt and pepper to taste
1 cup rice flour
2 cups milk
1 cup chicken broth
3 egg yolks, beaten
1 tablespoon butter
1 malagueta pepper, finely chopped (malagueta is a chili pepper found in Brazil.  You may subsitute jalapeno or other hot pepper)
4 cups bread crumbs
2 large eggs, beaten

vegetable oil for frying

DIRECTIONS

Sauté the garlic, onion in olive oil until soft.  Add salt and pepper to taste.

Place chicken on work surface and take the meat off the bones. Reserve 15 thin strips of chicken and finely chop the remainder.

Whisk together flour, milk and chicken broth until smooth and cook over medium heat until thickened, stirring constantly. Remove from heat and stir in egg yolks, butter, finely chopped chicken and malagueta pepper. Season with salt and pepper. Return to heat and stir until thick. Completely cool mixture by placing it in the refrigerator. Once fully cooled, take a scant 1/4 cup of mixture and shape it around a reserved strip of chicken, forming a "drumstick." Roll in bread crumbs, dip into beaten eggs and cover with another layer of bread crumbs.  Fry until golden brown in oil.
