Polenta Bites with Gorgonzola and Bacon

Rich and savory, melt in your mouth good!!  We made these as an appetizer, but they'd also make a great main course accompanied by a salad and/or vegetable dish.

INGREDIENTS

24 (12-inch thick) slices of polenta from a prepared roll

2 tablespoons butter

2 cups sweet onion, thinly sliced

1/2 cup walnuts, chopped

1/4 cup dried cherries (or cranberries), coarsely chopped

1 teaspoon brown sugar, packed

1 tablespoon fresh rosemary, minced

Salt and pepper, to taste

8 slices bacon, cut into 2-inch long strips and cooked

6 ounces Wisconsin Creamy Gorgonzola cheese, sliced

DIRECTIONS
  1. Preheat oven to 350°F (175°C).
  2. Arrange polenta slices on a baking sheet; bake 5-7 minutes per side or until hot.
  3. In a large skillet, heat butter over low heat.  Add onion and cook 15 minutes, stirring occasionally.  Add walnuts, cherries, brown sugar, rosemary, salt and pepper and cook for another 8-10 minutes, or until onions are caramelized.
  4. Top each polenta round with a slice of gorgonzola, a bacon slice and 1 tablespoon of the onion mixture.  Serve immediately.
