Cheesy Artichoke Squares

A delightful start to any party!

2 (6 oz.) jars marinated artichoke hearts
1 small onion, finely chopped
1 clove garlic, minced
4 eggs
1/4 c Italian seasoned fine bread crumbs
1/4 t salt
1/8 t pepper
1/8 t oregano
1/8 t Tabasco
1/2 lb sharp cheddar cheese, grated
2 T minced fresh parsley
    1. Drain the marinade from the jars of artichokes, reserving 2 tablespoons. Transfer the reserved marinade into a frying pan. Chop artichokes and set aside. Add onion and garlic to the frying pan and saute until the onion is limp (apprx. 5 min.). In a medium bowl beat the eggs with a fork. Add the bread crumbs, salt, pepper, oregano and Tabasco. Stir in the cheese, parsley, artichokes and onion mixture. Turn into a greased 8x8x2" pan.
    2. Bake at 325 degrees for about 30 minutes or until set (when a knife is inserted and comes out clean) and top is starting to brown around the edges. Let cool in pan; then cut into 1" squares and serve at room temp (can also be reheated and served warm).
