Cheese Fondue

A delicious appetizer that creates a social circle around the fondue pot!!

PREP TIME: 10 min.

COOK TIME: 15 min.

1 garlic clove
1 1/2 c dry white wine
1 T cornstarch
2 t brandy
1/2 lb Swiss cheese, grated
1/2 lb Gruyere, grated
Dippers: French bread cubed,sliced apples, pears and red peppers
  1. Rub the inside of a 4 qt. heavy saucepan or an electric fondue pot with garlic clove, then discard garlic. Add wine and brandy to the pot and bring to just a simmer over moderate heat.
  2. Toss the cheeses with the cornstarch.
  3. Gradually add cheese to the pot and cook, stirring constantly in a zigzag pattern (circular will cause the cheese to ball up)until the cheese is just melted and creamy (do not boil). Bring fondue to a simmer and cook, stirring, until thickened, 5-8 minutes. If using a saucepan transfer to a fondue pot set over a flame.
