Baked Beef Empanadas

These little empanadas are very flavorful and easy to prepare.  Serve them with a side of salsa and sour cream…YUM!
PREP TIME: 30 minutes
1 cup red potato - chopped fine
¾ cup onion - finely chopped
1 cup beef broth
¼ tsp salt - or to taste
¼ tsp red pepper flakes
¼ cup cumin
¼ cup allspice
½ lb of beef top sirloin (meat only)- finely diced
2 cloves garlic - minced
1 TBSP finely diced cilantro
cooking spray
2 pkgs. premade pie dough (4 crusts)

Preheat oven to 400 degrees.

Combine potato, onion, beef broth, salt, red pepper, cumin, allspice, sirloin, garlic and cilantro in saucepan over medium heat.  Bring to boil.  Reduce heat and simmer until potato is done - approx 8 to 10 minutes.  Remove from heat.

Drain meat - discard liquid.  Finely chop meat mixture.
Place pie dough on a floured surface and roll out to 1/8" thickness.  Using a 3" biscuit cutter cut 8 rounds per crust.
Working with one round at a time place one tablespoon of filling in the center of the round.  Moisten edges with water, fold in half, press edges together and crimp with fork.  Place empanadas on baking sheet sprayed with cooking spray.  Spray the top of the  empanadas with cooking spray.  Bake at 400 degrees for 8 minutes or until golden.
