Figs, Goat Cheese and Prosciutto

INGREDIENTS

18 large dried figs 
18 1/2-inch cubes goat cheese
18 thin slices prosciutto
18 large fresh sage leaves

 

DIRECTIONS
Preheat oven to 350 degrees.
Using small sharp knife, cut stem from top of each fig and make a slit in the fig. Fill each fig with a cube of goat cheese, then press opening closed. Place 1 slice of prociutto on work surface; top with sage leaf. Place stuffed fig at one end and roll up to enclose fig.  Repeat with remaining figs.
Cover the bottom of a medium skillet with a thin layer of olive oil.  Place stuffed figs in skillet and heat on medium until prosciutto is slightly crispy and cheese is heated through- approx 15 to 20 minutes.  Serve warm.
